I know this will seem petty but where did this woman learn to cook? Her skillet handle was always hanging over the edge…of the stove, of the counter. Wow. No dogs or children in this woman’s home? She never suddenly has to step to her right? Basic kitchen safety. I’m not sure about this recipe. I’ve seen something like it before BUT I don’t think it was presented as a Mexican dish. Let me know if you’ve heard of this as something else.

I’ve never heard it called sopa seca before. It means “dry noodles”. It’s made by stirring gently in a pan, adding broth or water as you go, like a risotto. It takes care. And it’s fee-day-oh with the accent on the first syllable, not fi-day-oh with the accent on the second. The use of canned chiles is maybe good enough.

My first-gen godmother would make this dish, frequently as we just loved it. We would eat it with her fresh, homemade tortillas.
