    It is the cornstarch slurry that gets crispy, not the potato. The potato resembles mashed potatoes. Not that it isn’t delicious but the cornstarch is highly refined and will spike your blood sugar. 😔

    cut russet potatoes in long wedges , 6 per potato, like shown here,and toss very lightly in olive oil.
    sprinkle kosher salt and pepper on them and stack them in an air fryer, 20 mins at 400 deg.

      I’ll give it a shot. I saw a bunch of videos claiming russet or Yukon make better mashed. Hog wash. Red for mashed and red for baking. I just buy Costco fries and put them in my T-Fal air fryer usually. Russets are okay roasted but I’ll try this.
