    You mentioned Calcium Chloride but didn’t say whether this is an additive during the canning process or whether it is inherent in how the tomatoes are grown. Roma style tomatoes tend to be prone to Blossom End Rot, which is often attributed to a lack of Calcium.

    San Marzano tomatoes are a not just another type of Roma shaped tomatoes. Authentic DOP-certified San Marzano tomatoes are grown exclusively in the Campania region of southern Italy, specifically in the Sarnese-Nocerino area near Naples and Salerno. They thrive in the rich volcanic soil at the base of Mount Vesuvius and are hand picked. They are grown in very specific conditions most notably the unique volcanic soil and Mediterranean microclimate are key to their flavor, providing low acidity and high sweetness. So don’t think if you plant San Marzano tomatoes you can duplicate the authentic flavor, you cannot. Garden tomatoes are far superior over store bought but Authentic San Marzanos are in a class that simply cannot be duplicated at home or anywhere. So when you see San Marzano “style” that just means they are similar in shape and size. There are some things not worth
    compromising. DOP- San Marzano Tomatoes and Parmesan-Reggiano cheese.
