Yoshimasa Ikeda learned how to make sushi back in Tokyo under the instruction of his father. Wanting to see what more of the world had to offer, he ended up on America’s west coast. He eventually settled in Portland, Oregon and created Yoshi’s Sushi, a food truck that serves fresh sushi daily. His cart specializes in Hokkaido scallop, salmon, and tamago nigiri. He also makes classic rolls like the California roll and spicy tuna roll. After spending many years training people to become sushi chefs, Yoshi took a demotion so he could spend more time cooking, and then went on to start his own business.

The part about how he went a year without using a knife then asked for a demotion takes so much courage.
So happy he managed to find success whilst still doing what he loves

Story time: I might be one of the only people here that can attest to this man’s absolute genius and passion from CHILDHOOD. Yoshi was the sushi chef at a small place in Torrance, CA called Sushi Eki Eki. This is the exact place he talks about where he met his lovely wife. My father and I were in that sushi bar 3-4 times a week from the time I was 9 to about the time I was 14 I think when it closed. During that time, Yoshi was in his 20’s and was just a superb chef. This man taught me from a young age what good sushi was supposed to be, he made everything with the utmost passion and always with a smile. On my birthday every year, he ordered a whole snapper for me and made it his way, and it still to this day, as I myself am a chef and went to a sushi academy to pay tribute to this man and what he taught me, try to recreate that snapper every year near my birthday. I can never fully get it right. I watched him growing up and I emulated every way I could. I took a lot of inspiration from this man, through my entire career and my personal life. Yoshi has brought a lot of people together, he’s always had this uncanny ability to bring people together and transcend cultural boundaries so well and naturally, and his passion for his craft makes him legitimately one of the greatest sushi chefs ever, in my eyes at least. Yoshi if you see this, thank you for everything you taught me as a child to make me the man and chef I am today. You don’t know how important you are to so many people
