The father-son duo and a handful of others serve up some of the tastiest and most popular pan chicken on the island. Sean Paul, Usain Bolt, weekend party-goers, and even politicians flock to Northside Chicken to eat this single-menu-item delicacy seasoned with thyme and scotch bonnets, then grilled on cleaned-out oil drums.

I recently visited Jamaica from NYC for vacation and let me just say that the Caribbean food there is eons better than from here in the states. The chicken especially is so flavorful and tender compared to here. I already miss this magical island not just because of the food but because of the hospitality and beautiful beaches and greenery.

Your history is a bit flawed. Tianos where coastal never interior to Jamaica. Also it was not the cockpit country Maroons that developed the unique flavor of jerk it was the blue mountain maroon of st Mary st Thomas and Portland. It’s coming from he African style of smoking food to preserve it. The moisture and humidity in blue mountains spoil meat quickly the wild hogs of the area that they would catch for food
