Has anyone tried this?
Yes. After 35 minutes they were done but not browned. A few minutes under the broiler helped. But still very soft. Good, but soft.
Forgot the garlic.
This is delicious! I did cut back most of the skin with a potato peeler. Who thought eggplant with vinegar would taste so good.
