Wow, it blows my mind that you’ve never had Parmigiana / eggplant lasagne. I guess it must not be common in America, but we have a lot of Italian immigrants in Australia so I grew up eating it. I also think that the Italians in Australia maintained a lot of their heritage whereas the Italians in America did not.
