Recipe for 5 gallons (19 L) , your efficiency may vary:
“Meet Me In Prague”
4.2% ABV 30 IBU
7.75 lb Prostejov Pilsen Malt (100%)
Mash:
-148 F (64 C) for 30 min
-158 F (70 C) for 30 min
-Pull 1/3 mash volume for a decoction as soon as this step starts, bring to a boil in a second kettle and boil for 15 min before returning back to the main mash tun to raise to final mashout step
-170 F (77 C) for 15 min
Water (ppm): Ca: 23, Mg 0, Na 8, Cl 25, SO4 26, HCO3 16
8 gal (30 L) RO water with NO ADDED MINERALS
60 min boil:
First wort hops – 1/2 oz (14g) Sterling (7.1% AA) (15 IBU)
30 min – Add 1/2 oz (14g) Sterling (7.1% AA) (10 IBU)
5 min – Add 1 oz (28g) Sterling (7.1% AA) (5 IBU)
OG: 1.040
Yeast: Omega OYL-101 Pilsner I
Ferment at 48 F (9 C) for 10-14 days, ensure no diacetyl present, then keg and condition near freezing for 3+ weeks
FG: 1.008

Great video! How hot was the wort when you transferred to Brewbuilt X2? I like the idea of using the jacket to cool the wort, but I was worried it could damage the jacket

It got down to around 90 degrees or so. No real risk of damaging the jacket
