Two schools of thought.
A) Honour the ingredient by keeping it in its natural shape as much as possible.
B) If you can’t eat it, don’t put it on the plate.

the fact that the comments are not turned off really give me faith in humanity.
If you have to make all of those decorations to present your food, then the food probably isn’t that good. It’s pretentious.
I know I’m an uncultured swine but if I had a med rare piece of fowl that showed up on my plate looking red AF, I”d be like “umm you undercooked this my dude” and then I’d be slapped by the server for being insouciant ! LOL
The higher the Michelin starred restaurant is the less food you get on your plate. At a 12 Michelin Star restaurant, they serve you in your dream.
