  1. Skip the chopping; smash, schemer, then chop if necessary. It won’t be needed 90 percent of the time.

  2. Today 10/16/25 I searched for Chef Gordon’s help on this because I peeled garlic for around 30 to 60 minutes of peeling 1st so Minicing garlic is much easier

  3. All the comments whining about how its “too much salt” are kinda funny tbh, just goes to show how so many people cook without really understanding anything theyre doing. It wasnt that much salt (esp since its kosher salt) and you can always just add less salt later on in other steps, its all to taste not to measurement

  4. Salt first, underneath the garlic before squishing. It prevents it oozing into the board better. Obviously. Shout out Urban Peasant.
