Short answer is yes, a fungus could evolve to control humans the same way it does ants. Long answer, problem is, that takes millions of years, and not to mention it would simply do what it does to ants and it wouldn’t be any kind of zombie apocalypse.

Most of the magic mushrooms ive found have been slimed out by slugs/worms
I’m an experienced mushroom hunter. He’s correct that there are no easy universal characteristics of poisonous mushrooms and you just have to memorize individual species. But at least in my country, there are no known poisonous boletes or Russula species and only one even mildly poisonous Lactarius species. Amanitas, on the other hand, are very often poisonous. All of those mushroom groups have their own recognizable characteristics. So, recognizing what type of mushroom you’ve found already helps a lot.
Many edible species are also very easy to recognize. Sometimes, you don’t even need to be certain about the exact species as long as you can narrow it down to a few specific edible species. For example, if you are absolutely certain that a specific mushroom is a Leccinum and that there are no poisonous Leccinum species where you live, you can eat it even if you’re unsure about the exact species.

The cordyceps-ieh question is more interesting in what it shows about human psychology. In particular, we find disease-induced violence and violence-based spread of disease terrifying, when disease needs no violence at all to destroy the body, and silent, invisible spread via indirect exposure is far more deadly to a population.

I think the craziest thing about cordyceps is that it must have a consciousness to know where to make ants walk and climb. Heavily implies that fungus can have a form of intelligence beyond our understanding
I like the theory that the fungi are actively trying to take you over in its last moments but our biochemistry is too complex for it
