Dark Mild is one of the coolest beer styles I’ve been sleeping on for so long. It is simultaneously low in alcohol, but high in drinkability and flavor, and feels like a full-sized beer! The flavor is nutty, rich and malty and leaves you wanting another pint, which is fine because this is less than 4% ABV! This rare beer style almost disappeared entirely if not for homebrewers and is finally starting to come back.

3.7% ABV 31 IBU
5.5 lb Admiral Maiden Voyage (72.1%)
0.75 lb Admiral Kilnsmith (9.8%)
0.75 lb Simpsons Malted Oats (9.8%)
0.25 lb Simpsons Crystal Dark (3.3%)
3 oz Weyermann Carafa Special II (2.5%) *Yes the video text is wrong
3 oz Fawcett Pale Chocolate Malt (2.5%) *Yes the video text is wrong
Mash:
Mash at 155 F (68 C) for 60 min or overnight
Water (ppm): Ca: 101, Mg 17, Na 49, Cl 105, SO4 197, HCO3 88
Add to 8 gal (30 L) RO water: 3g Baking soda, 5g CaCl2, 1g NaCl, 5g Epsom, 7g Gypsum
60 min boil:
60 min – Add 1 oz (28g) East Kent Goldings (5% AA) (20 IBU)
20 min – Add 1 oz (28g) East Kent Goldings (5% AA) (11 IBU)
OG: 1.037
Yeast: Lallemand Nottingham
Ferment for 1-2 weeks at 65 F (18 C). Cold crash and naturally carbonate
FG: 1.009

My ESB’s always end up real bready and heavy, I think i’ll be using 2n’d runnings for bitters. Does anyone know what English yeast gives that dirty ashtrayfruity flavers ?
You’re probably picking up those notes from hops, most likely Fuggles. They tend to give off earthy-woody-fruity, or at least that’s what I typically pick up when they’re used.
@@patmatheson4679 Yea I just did a bunch of 2nd running batches and used fuggles and challenger and pitched Mangrove Jacks Liberty Bell yeast. just sprinklrd it in. so far it’s tasting like what I was going for.
That beer looks bloody good! i gave up drinking a few years ago and with that homebrewing but have done a few NA beers here and there with not much success. was thinking of brewing your stout but would prefer this kind of style. would this work as an under 1% beer cold mash? or was thinking of a irish red ale version of your stout. you have got me inspired again to brew!
Back in the day when I used to play the darts leagues around Birmingham, Ansells Mild (from Aston) was my pint of choice, I liked to play my game late so didn’t want to turn up to the dart board smashed – even tho I played better with a bit of dutch courage inside!! In the english midlands it was common to use a standard sparkler on the beer engine and not a creamer, that’s a regional thing! thanks for the video Mild is one of my go to brews, glad to see it’s catching on over your side of the pond.
