    1. When i worked in a chocolate factory, to cover fruit and nut, we used to keep them in the pan and use maltodextrin powder instead of your sugar/starch. Also we thinned out the sugar solution so it was more of a liquid than a syrup. This made it easier to coat without the fruit/nut clumping… Many thanks for reminding me of a great job that i had

  1. I have made Alton Browns Sugar plums, nice crunch from the sugar on the outside and a sweet fruity/nutty taste. Not too sweet but still clearly a treat, goes fantastic with a cup of tea
