“This is definitely more difficult than having a restaurant. You have to bring the whole kitchen over here—pots, and pans, and plates.” Spend a day behind the scenes at the Queens Night Market with chef Myo Lin Thway who has been serving his ‘Burmese Bites’ in New York City for over 25 years—and is now dishing up over 500 plates a day to adoring patrons.

ABOUT BON APPÉTIT
Bon Appétit is a highly opinionated food brand that wants everyone to love cooking and eating as much as we do. We believe in seasonal produce, properly salted pasta water, and developing recipes that anyone can make at home.
I’m proud to see our Myanmar people promoting our national food but just one thing as a Myanmar. He should be addressing our noodles as our native language called Khot Swel and not Japanese ramen noodles.
And Nan Gyi noodles is fermented rice noodles unlike udon noodles.
Even Thailand adapted our noodles to Kao Soi in their tongue as coconut noodles and called Khowsey in India.
You should be proud to present Khot Swel and Nan Gyi but not Udon or Ramen.
Thai don’t call their noodles udon or ramen.
In Myanmar language noodles = khot swel even Nan Gyi is considered Khot Swel.
